A light and fresh salad to go along with any meal.

Bocconcini Salad with homemade Italian dressing
Equipment
- Chopping Board
- Chopping Knife
- A small jar (for shaking the sauce together)
- Measuring Utensils: tbsp, tsp, 1/4 tsp, 1/8 cup, 1/4 cup,
- Kitchen Scales
Ingredients
- boccochini
- 3 tbsp sundried tomatoes (roughly chopped)
- 1 cos lettuce (torn)
- 200 grams cherry tomatoes (halved)
- 1 small cucumber (into slices)
- 1 avo (sliced)
- 1/4 red onion (thinly sliced)
- kalamata olives
For the dressing
- 1/4 cup olive oil
- 1/8 cup white vinegar
- 3 tbsp water
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/8 cup fresh parsley (finely chopped)
- 1 sprig fresh thyme
- 1 clove garlic (crushed)
- 1 tsp chilli flakes
- 1 pinch salt and pepper
- 1/4 tsp dijon mustard
Instructions
- In a jar or container measure out all ingredients for the dressing and shake with the lid on to combine.
- In a large salad bowl, add all the ingredients and toss together. Drizzle with your homemade dressing and serve as a side salad to your favourite meal.
