Bocconcini Salad with homemade Italian dressing

Equipment

  • Chopping Board
  • Chopping Knife
  • A small jar (for shaking the sauce together)
  • Measuring Utensils: tbsp, tsp, 1/4 tsp, 1/8 cup, 1/4 cup,
  • Kitchen Scales

Ingredients

  • boccochini
  • 3 tbsp sundried tomatoes (roughly chopped)
  • 1 cos lettuce (torn)
  • 200 grams cherry tomatoes (halved)
  • 1 small cucumber (into slices)
  • 1 avo (sliced)
  • 1/4 red onion (thinly sliced)
  • kalamata olives

For the dressing

  • 1/4 cup olive oil
  • 1/8 cup white vinegar
  • 3 tbsp water
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/8 cup fresh parsley (finely chopped)
  • 1 sprig fresh thyme
  • 1 clove garlic (crushed)
  • 1 tsp chilli flakes
  • 1 pinch salt and pepper
  • 1/4 tsp dijon mustard

Instructions

  • In a jar or container measure out all ingredients for the dressing and shake with the lid on to combine.
  • In a large salad bowl, add all the ingredients and toss together. Drizzle with your homemade dressing and serve as a side salad to your favourite meal.
