Baked Vegan Ricotta Pasta


Baked vegan cashew ricotta with roasted garlic, cherry tomatoes and herbs, mixed with your favourite pasta to make a delicious, creamy pasta.

Baked vegan ricotta pasta

  • Ovenproof casserole dish
  • Chopping Board
  • Chopping Knife
  • Food Processor
  • Stirring utensil
  • Measuring Utensils: a cup, 1/2 cup, 1/4 cup, tbsp and a tsp


For the vegan ricotta

  • 2 cups raw cashews
  • 1 lemon (juice of)
  • 1/4 cup nutritional yeast
  • 1 tsp salt
  • 1 tbsp pepper
  • 3 cloves garlic
  • 3 tbsp white wine vinegar
  • 2 tbsp olive oil
  • 1 tbsp fresh oregano
  • 1 tbsp fresh basil
  • 1 tbsp fresh thyme

For the pasta

  • 600 grams fresh cherry tomatoes
  • 4 cloves garlic
  • 1 sprig thyme
  • 1 generous pinch salt and pepper
  • 1 tbsp chilli flakes
  • 2 tbsp olive oil
  • 1 small handful basil
  • 300 grams of your favourite pasta
  • 1/2 cup pasta water


  • You need to make your cashews soft so they blend easily and turn into a nice smooth sauce and to do that you need to soak them overnight or boil them.
    To boil: add your cashews to a medium saucepan and cover with water. Bring them to a boil on the stove and cook for 15 minutes. Make sure you strain them well.
  • Add all your ingredients for the vegan cheese to a food processor including your pre-boiled or soaked cashews. Blend until nice and smooth, adding a tbsp of water in at a time until you reach your desired consistency.
  • Preheat your oven to 180°C.
  • Add your vegan cheese to the centre of an ovenproof dish. Scatter the cherry tomatoes and garlic around the cheese and drizzle with olive oil, then sprinkling over the herbs and spices. Place your dish uncovered into the oven for 20 minutes.
  • Whilst your dish is in the oven, it's time to cook your pasta. Cook your pasta per the instructions on your pasta box, making sure to save a 1/2 cup of pasta water.
  • Add the cooked pasta and 1/2 cup of pasta water to the cheese dish and stir everything together nicely. Top with fresh basil and serve hot.
